个人简介

阚建全,四川仪陇县人,黄漫 二级教授。

长期从事食品科学与工程、食品质量与安全等领域的教学与科研工作。现为中国-匈牙利食品科学“一带一路”联合实验室(筹)的执行主任,农业农村部农产品贮藏保鲜质量安全风险评估实验室(重庆)主任;重庆市第二届学术技术带头人,重庆市 “322工程人才”第二层次人选,科学中国人(2015)年度人物,重庆市高层次人才“第三类”人选,重庆北碚区第二批“缙云英才”支持计划人选;四川省高层次人才计划特聘专家。中国经济林协会加工利用分会副会长、中国农学会农产品加工及贮藏分会理事、重庆市食品科学技术学会理事长。主持国家级项目26项,省部级项目37项,主研国家级/省部级项目9项;公开发表学术论文581篇,其中SCI收录论文236篇;出版专著和教材5部(主编)和3部(副主编)。以第1发明人获得发明专利授权12件。获教育部技术发明一等奖1项(3/6)、中国食品技术学会技术发明一等奖1项(3/8)、重庆市科技进步二等奖2项(第1)和三等奖4项(其中2项第1),西藏自治区科学技术二等奖1项(6/20),农业部全国农牧渔业丰收奖农业技术推广成果奖二等奖1项(4/25),湖北省科技进步二等奖1项(4/6)。

【研究领域】

食物资源的化学、营养、安全方面的研究,主要集中在(1)食品在加工贮藏运销过程中品质劣变的机制及其控制技术;(2)食品中大分子物质的结构及其食品工艺学功能特性;(3)食物资源的综合高值化利用,包括功能因子的化学工程制备与改性、结构表征、生物活性评价;(4)食品基础原料淀粉、蛋白质和油脂的改性与产品开发;(5)食品质量安全的风险评估技术等方面的研究。
